We’ve been to Niseko a bunch of times, mainly for the incredible skiing, but every trip ends up being about so much more than just the slopes. Nestled about two hours from Chitose/Sapporo airport, Niseko is this vibrant ski town that seems to pull in people from all over the world. One of the coolest stories I’ve heard is about this president of a renowned sake company who, after skiing these hills, was so smitten with the place that he decided to set up a craft gin distillery right here in Niseko.
The Niseko Distillery is tucked away between Mt. Niseko Annupuri and Mt. Yotei, and it’s simply stunning. It’s a perfect mix of Japan’s knack for craftsmanship and the peaceful natural surroundings. They’re all about quality and bringing new ideas into the world of spirits, and it really shows.
We found their gin, Ohoro, to be a great base for different cocktails. My favorite is making a gin & tonic with this gin. It has a distinctive flavor.
The Essence of Niseko: Water and Seasons
The secret to the distillery’s success? It’s got to be Niseko’s incredible natural resources. The town is known for its hefty snowfalls, which not only make for great skiing but also supply some of the purest water around. This high-quality water is essential for spirit making. Coupled with the area’s distinct seasons, it creates the ideal setting for aging whisky. Watching how they leverage these natural gifts to let their spirits mature at their own pace, in harmony with the shifting seasons, is pretty amazing.
A Journey of Whisky: From Inception to Maturation
We learned that the distillery marked a significant milestone on March 24th, 2021, when they distilled their first batch of clear, unblended whisky. They’re planning on releasing this batch in 2024, after a three-year aging process. They believe great flavors take time to develop and mature, just like the natural landscapes around them.
Crafting Ohoro Gin: A Tribute to Heritage and Flavors
They’re not just about whisky, though. Niseko Distillery has also carved out a reputation with its ohoro gin. The name “Ohoro,” inspired by the Ainu language of Hokkaido’s indigenous people, reflects themes of heritage and continuity. The gin is crafted with a blend of 13 botanicals, including locally sourced sweet gale and Japanese peppermint. The result? A smooth, full-bodied gin with a lively hint of citrus that not only tastes great but also captures the essence of the local culture and landscape.

The Legacy of Ohoro Gin
The crafting of ohoro GIN goes beyond just making a beverage; it’s about forging a connection to the land. Using botanicals grown right here in Hokkaido and the soft waters flowing from Niseko Annupuri, the gin stands out with its clear, smooth base and citrusy undertones. It’s versatile enough to be the star in a variety of cocktails, from a refreshing gin and tonic to a sophisticated martini. It’s quickly become a favorite among both mixologists and gin enthusiasts alike.
