We were recommended Bar Talisker from the chef and also the customers at Gion Nishimura. It was a great find and it is now our favorite bar in Gion, Kyoto. We noticed the nice stereo system playing Miles Davis as soon as we entered the bar. The bar master was a well-known bartender in Ginza for many years, and one day he decided to move the whole bar to Gion. He told me that he brought all interiors from the former bar he owned. The bar is famous for its gin & tonic, which he doesn’t use any ice. I highly recommend you try it!
Since its opening in July 2016, Bar Talisker has rapidly gained national fame, especially among cocktail connoisseurs. Unlike the glittering streets north of Shijo Dori, Bar Talisker is nestled in the south, amidst a serene setting of teahouses, lodgings, and temples, embodying the essence of Gion’s elegant backstreets. The mastermind behind this celebrated establishment is Mr. Uchida, who began his bartending career at the age of 22 in a renowned Roppongi bar. He made his mark as an independent owner in Ginza in 1998. During his illustrious career, he received the highest four-star rating from the esteemed “Tokyo Delicious Shops” corner in Weekly Bunshun and authored the cocktail book “My Standard Cocktail – How to Utilize the Base Alcohol” in 2003 with two other bartenders, establishing himself as a renowned figure in the bar industry both in Japan.
The tranquility of Shijo Dori’s bustling atmosphere fades as you approach Bar Talisker, hidden behind a sturdy door that only those in the know would dare to open. What lies beyond is a world apart. Having relocated from Ginza after 18 years, the bar in Kyoto continues to dazzle its patrons with a selection ranging from classic cocktails like Moscow Mules and Gin Tonics to rare finds like “Highland Park 25 years” and “1952 Cole.” Uchida’s profound knowledge attracts a global clientele.
The space reveals an antique charm with vintage lamps and robust beams, accentuated by a striking 5-meter-long oak counter. The counter, imported from the Ginza outlet, is thoughtfully arranged to offer a symmetrical view, with a central table flanked by evenly aligned bottles. A glimpse into the small garden at the back and the Art Nouveau-inspired rounded centerboard at the front of the counter adds to the bar’s allure.
The counter’s layout, emphasizing symmetry and sightlines, reflects Uchida’s meticulous attention to detail. Patrons rave about his extensive knowledge of spirits and cocktails, with recommendations like the exceptional Martini standing out. The ambiance is further enhanced by timeless melodies playing from a record player, creating an intoxicating experience in the best sense.
Located on a street lined with traditional tea houses, Bar Talisker might appear exclusive with its members-only signage. However, first-timers are also welcomed, as per the norms of Japanese hospitality. The bar’s design includes a waiting area, offering a moment of pause before immersing guests in its intimate setting, which includes a 10-seat counter and additional table seating. The comforting sound of vinyl records fills the air, adding to the bar’s enchanting atmosphere.
Originally a celebrated establishment in Ginza, Bar Talisker was known for its exceptional whisky selections, including rare old bottles coveted by connoisseurs. The surprising closure in 2016 sent shockwaves through its fanbase. However, Uchida chose Kyoto’s Gion for the bar’s revival. The transplant of the original Ginza bar counter to the Kyoto location reassures long-time fans while welcoming new ones.
